
Sparkling Wine
With the consistent selection of suitable grapes and base wines as well as traditional bottle fermentation, we follow the example of classic champagne production. In the traditional method, a second fermentation takes place in the sparkling wine bottle, which produces carbon dioxide. The majority of the base wines come from the 2018 and 2019 vintages. The BLANC ET NOIR brut nature is aged in the bottle for almost 48 months before being disgorged.

This musical term refers to an interval of 8 steps; for us it is synonymous with the strength, structure and sophistication of our premium dry wines. The fastidiously selected fruit comes from the fertile loess terraces on the Kasierstuhl and Tuniberg and benefits from a mild climate and careful vineyard cultivation — wines that sing at a higher octave indeed. They are available in the following varieties: Silvaner, Riesling, Pinot Blanc, Pinot Gris and Pinot Noir, Pinot Noir Rosé and Muskat-Ottonel.
